In the first weeks of September, we observe our trees with their hanging fruit every day to understand when is the right time to harvest them.
Usually in the period from the second week of September to the second week of October we carry out the harvest and processing of the olives from which we obtain our precious extra virgin olive oil.
#LUPOLIOWhen are the olives milled?
The harvested olives are placed in perforated plastic crates to allow for the correct conservation of the fruit, which is then transported to the oil mill on the same day. The milling takes place at a controlled temperature with a two-phase extraction system.
